In 2015, this Cantina merged with the Cantina\u003cbr\u003eColli Vicentini (from whom we buy the Ca’ di Alte wines). Alberto\u003cbr\u003eMarchisio is now responsible for winemaking, with Matt Thomson of\u003cbr\u003eBlank Canvas involved as a consultant.\u003cbr\u003e\u003cbr\u003eVINEYARDS\u003cbr\u003eThe grapes are sourced from vineyards in the Province of Vicenza,\u003cbr\u003eprimarily situated on hillside slopes with a south-east exposure.\u003cbr\u003eCantina di Gambellara is a certified organic winery that pays\u003cbr\u003emeticulous attention to vineyard management.\u003cbr\u003e\u003cbr\u003eVINIFICATION\u003cbr\u003eCantine di Gambellara Prosecco was made using the Charmat\u003cbr\u003emethod. The grapes were hand-picked, and the stalks removed\u003cbr\u003ebefore crushing. After soft pressing the must was fermented in\u003cbr\u003etemperature controlled stainless-steel tanks until 10% ABV was\u003cbr\u003ereached. The wine was then moved on to pressurized tanks\u003cbr\u003e(autoclave) and an addition of yeast and sugar started a second\u003cbr\u003efermentation under pressure. After filtration and centrifugation, the\u003cbr\u003ewine was refrigerated and bottled under pressure to preserve the\u003cbr\u003eright level of dissolved CO2.\u003cbr\u003e\u003cbr\u003eTASTING NOTES\u003cbr\u003ePale straw yellow in colour, this Prosecco displays a bouquet of delicate fruity notes of white pear and peach.
