Serves 4-6
Ingredients
· Puff pastry block
· 1 eggs
· Ele (or any soft cheese/ feta)
· Dill (handful)
· 2 courgettes
Method
1. Heat oven to 200C/180C fan/gas 6. Roll the pastry out on a lightly floured surface to a A4 rectangle. Slide onto a baking tray, brush with the beaten egg and cook for 20 mins or until golden.
2. Meanwhile, slice the courgette into ribbons (you can use a potato peeler) and chop up the dill.
3. Take the pastry out the oven and spread the soft cheese on top (leaving a boarder). Top with dill then arrange the courgette ribbons on top. You can use some of the Ele cheese oil before returning to the oven for 15 mins or until the pastry and courgette has browned. Top with cooked broad beans for extra freshness. Serve with salad.
