Sticky Date Yogurt Bowl

It's raining this morning and I'm looking for food that hugs the soul. These caramelised dates are warm and rich and the cool yogurt is a perfect companion. I go luxury when I make this and it's 'Cornish Moon Milk Natural Yogurt' every time.

Serves 1

Ingredients  

·      3 dates (always Zaytoun for me)

·      A spoonful of good butter or ghee

·      Yoogurt

·      Salt flakes (optional)

 

1.     Slice the dates lengthways and open the date up to remove the pit. Be careful not to go all the way through although it doesn’t really matter if you do.

2.     Put the butter in a pan and let it melt. Place the dates on the pan so that the cut side is down. You just want them to warm through and get sticky

3.     Put the yogurt in a bowl and spread it out. Top with your warm dates and spoon the butter on top. Sprinkle some salt flakes over this (if you like), find a comfy spot in the house and enjoy.

 

You can add spice to the pan when you caramelise the dates. Warm spices like cardamon and/or cinnamon work well. Sometimes add extra toppings like chopped nuts and maybe some maple syrup but it is perfect without.
