Saffron is the world’s most valuable spice by weight, prized for its intensity, rarity and depth of flavour. Each strand comes from the fine crimson stigmas of the crocus flower, a crop that must be harvested entirely by hand, with just a few precious threads gathered from every bloom.
Our Greek saffron is grown in the region of Kozani, in western Macedonia, across more than 40 small villages and hamlets surrounding the farming town of Krokos. Cultivation, harvesting and processing are carried out exclusively by the local Kozani Saffron Co-operative, preserving centuries-old knowledge and ensuring exceptional quality and traceability. This protected origin is internationally recognised for producing some of the finest saffron in the world.
Known in Greek as krokos, saffron has been prized since antiquity for its colour, aroma and culinary versatility. A small pinch releases a warm, honeyed perfume and a deep golden hue, transforming both sweet and savoury dishes. It is traditionally used in rice and grain dishes such as risotto and paella, in seafood stews and broths, and to elevate chicken, lamb and slow-cooked vegetable dishes. In baking, saffron brings gentle fragrance and colour to cakes, breads, biscuits and custards, while a few threads can also enrich milk puddings, syrups and desserts.
Saffron can also be gently infused in hot water or milk to make a fragrant tea, long enjoyed for its warming character and naturally high antioxidant content.
